Kevin’s Kat Fried Chickun

So i was at work writing some code and thinking about what I would eat for dinner and i had an idea…

2 large chicken breast (boneless skinless trimmed and chopped into medium sized strips)
1.5 cups of corn flower
1 cluster of green onions (only the green part, finely chopped)
~5 segments of fresh garlic (very finely chopped)
salt to taste
red pepper (a few dashes)
1-1.5 of an egg
1-1.5 a cup of milk
few splashes of dark beer
1oz. of whiskey
~3 sticks of butter

First off, take the shot of whiskey and open the beer. in a large mixing bowl, combine corn flower, green onions, garlic, at least 3 teaspoons of salt, pepper, egg, and milk.  mix very well.  should be about the texture of a very thick pancake batter.  if it is too runny, you can add more corn flower.  in a deep skillet, melt the butter at medium high (approx).  add chicken to mixing bowl and stir it around to coat the chicken well in the batter.

once butter is melted, pour some beer into the mixing bowl and stir it around…not too much beer at all…just a splash, otherwise you will wash the fucking batter off..  drink the remaining beer. now put the chicken into the melted butter piece by piece…cook until it is dark brown moving the chicken around gently to cook all the peices.. if the butter is not covering the chicken mostly then add more…but dont fucking burn it.  you will get a good idea of when it is done when the butter starts to turn a little brown. when its done, take the chicken out and lay on a bunch of layered papertowels to drain.

Serve with either Sirracha (rooster sauce) or ketchup as a dipping sauce.  goes really good with buttered french bread as a side.

Kevin’s Krazie Dippin’ Shrimp

1 stick of salted butter
8 oz. of white wine
1 lb. of shrimp (white, peeled)
2 roma tomatoes
1 bunch of green onions
1 orange
3 cloves of fresh garlic
6 medium sized leaves of fresh basil
one loaf of good french bread
salt (to taste)
Sriracha (to taste, not much)

In a medium sized skillet, add butter and sriracha over medium heat.  Chop green onions, tomatoes, garlic and ad to skillet with salt.  cook until tomatoes get soft then add in shrimp and cook for 5 minutes (or until cooked). now add the wine (8 oz or 16 oz.) and squeeze orange juice (avoid getting the seeds in).  simmer over medium heat for 10 minutes or less.. taste to make sure you didnt fuck it up. add salt because you probably put too little in the begining.

Serve in bowls. eat shrimp. dip bread in sauce.
